How long should you have a photographer stay at the wedding
Till the Bride and Groom (or whoever is designated to handle the activities at the wedding) tell him/her its okay to leave.
Five hours will usually cover a reception. Most receptions run 4 to 5 hours, presume the bride and groom will leave before the five hours are up, this gives the photographer time to get his equipment together and leave. Of course if you want evening gowns taken before the wedding and during the wedding youre looking at a long day. How long will depend on if you want pictures taken at the brides home while she gets dressed (which is customary but not required) and how much time the wedding takes (for instance a brief ceremony wont take as long as a full Catholic mass.) Also if theres a long break between the wedding and reception it will be a longer day.
